Garum is a restaurant in Mets, Athens, built around fermentation,where Greek ingredients are worked the Asian way; slowly, deliberately, over weeks instead of minutes.
Chef Christos Glossidis and food scientist Themis Konstantina Stylianoudaki built it around a single idea:
the ancient Greek garos and the Asian art of fermentation are closer than they look.
The result is something new,
